When your eBook is open in Bookshelf, the book dimensions and zoom can be adjusted to your preferences.

At the bottom right hand corner is a menu:

By selecting the Aa you can set the zoom on the page or set the page.

You can also select Fit Height - so the entire page fits on the screen:

Or Fit Width so that the text is zoomed to fully fit the width of your screen:
